Andalusia Seville

It is said the only thing missing in Seville is the ocean.

Indeed, the province is not found wanting in landscapes, fine cities, monuments and villages: in the north there are the mountain ranges; in the central area you will find fertile farm land, especially around the Guadalquivir river; and in the South there is part of the Doñana National Park. To cap it all there is the beautiful city of Seville, with its wealth of monuments, including the Mezquita, the most beautiful mosque built by the moors and the great Alcazar cathedral. These are certainly not to be missed.

There are also sleepy and beautiful towns and villages to visit such as Ecija, Carmona, Utrera, many of which may be found around the Aljarafe region, as well as some villages set in the mountains.

Gastronomy Andalusian cuisine has been inspired in equal measures by its climate and the numerous cultures that have established themselves there. The land is well suited to growing olives and grapes. Indeed, it is home to sherry, one of the world’s oldest and most famous wines, the production of which thrives on the year round sunshine.

Andalusia also created another excellent drink, Sangria, made from red wine and fruits that is excellent for quenching the thirst on hot summer days.

It is also home to the famous gazpacho, a cold soup made of diced tomatoes, cucumbers and green peppers in olive oil, vinegar and garlic, usually served with a sprinkling of croutons, which is again perfect for the local hot climate.

The region also has fine line in confectionery and pastry - an Arabic legacy - and a variety of dishes based on pork and ham. Frituras (servings of small fried fish) and stews are just some of the other items from a school of cooking that boasts a long and well-established tradition.

Fiestas Seville has some of the most important fiestas in Andalusia. When the orange trees begin to blossom, Seville decks itself out for its famous Semana Santa (Easter Week) and Feria de Abril (April Fair). Semana Santa started in the 14th century and is the city's most famous celebration. It spans the 7 days of Easter, with the staging of daily processions.

The other big celebration, the Feria de Abril, was created in the mid-19th century as an agricultural and cattle fair. During the celebration, the city's men flock to the event dressed in short jackets, boots and chaps, and the women wear colourful dresses with ruffles.

The Romería (pilgrimage) del Rocío is also worthy of note. The pilgrims come from all to the sanctuary of the Virgen del Rocío in the village of Almonte, Huelva, to see the procession. The procession is solemn, but the uniforms and dress of the different Brotherhoods are colourful. Many of the streets along the path are covered with white awnings.
