The 18th century farmhouse that now houses Le Saint-James was converted and enlarged by Jean Nouvel in 1989. The architect designed four pavilions, each connected to the original building, to create the hotel's guest rooms. The most outstanding feature of this accommodation is the smooth transition from the interior of the rooms to the natural surroundings, which gives the feeling of dining, sleeping, resting and relaxing in the middle of the vineyards. The architecture is so impressive that it has even been recognised by the Ministry of Culture as part of France's 20th century architectural heritage. Because of its panoramic views, Bouliac also is known as the “balcony of Bordeaux” and provides a stylish and unobtrusive location, nod to the famed eponymous street in historic downtown Bordeaux.

The 1 Michelin-star Saint-James gourmet restaurant is open from Tuesday to Saturday for dinner (19:30 to 21:00) and additionally Wednesday to Saturday for lunch (12:00 to 13:00). The restaurant provides a comfortable atmosphere sitting down to a table in the heart of nature, surrounded by greenery and vines. The bar at Le Saint-James opens onto a vast terrace, the hotel grounds and a limitless view of Bordeaux. The Café de l’Espérance, an annex of Le Saint-James, is located in central Bouliac and can be reached on foot from the hotel in a matter of minutes. It is opened every day of the week for lunch (12:00 – 13:30) and dinner (19:30 – 21:30).
